Vegetable scraps, any kind. I use carrot peels, celery bottoms, onion and garlic scraps, herb stems, and more! Fresh or frozen vegetable scraps can be used interchangeably. Customize the recipe based on what you have and the flavors you enjoy. It’s often recommended not to use these vegetables as they may make the broth bitter or over flavored or turn it cloudy:

However, note, when using vegetable scraps from frozen, these won’t caramelise because of the water content from the ice. You could leave them to defrost and then do this step or use vegetable scraps that haven’t been frozen. A pressure cooker could also work to caramelise the veggies ends, from frozen (although I haven’t tried it). Vegetable broth is made by simmering water and vegetable trimmings along with salt, peppercorns, and herbs. The resulting liquid can be used as a base for soups or sauces as well as for flavoring in rice dishes. Add the rest of the ingredients, apart from the pepper, and pour over 12 cups of filtered cold water. Pressure cook on high pressure for 15 minutes. Let pressure release naturally. Cool at room temperature. StrainingSimmer 2 hours – Simmer for 2 hours and reduce by half. We’re starting with 2 litres / 2 quarts of water which will reduce to 1 litre / 1 quart;

Laced with the perfume of fennel and coriander seeds, this vegetable broth infuses any recipe it touches with a delightful and distinctive seasoning. Begin by gathering all your vegetables – if you have a bag of scraps, then use them. Alternatively, use the ingredient suggestions in my recipe and begin by chopping the vegetables roughly. Feel free to leave the skin on the onion – I chose to remove it as I knew I would be blending the leftover vegetables into a soup. However, if you’re using vegetable scraps then go ahead and use the skins too (I always include carrot peels). Vegetable cubes 0.5 g can also add a bit of colour to your dishes, so be aware of this if you are trying to maintain a light colour in your food. Some people may find that the taste of vegetable cubes 0.5 g is too strong. If this is the case, you can dilute it with water. I brown the onions thoroughly in hot olive oil for about 5 minutes. This adds so much flavour! We also sauté the carrots, celery, leeks, and smashed garlic cloves. Getting the caramelization this early on in the process allows us to cut down on simmering time.You need to cook it for at least 30 minutes. The longer you cook it, the more flavorful it will be, though.
